Guacamole a la mexicana

Mexican style guacamole

Ingredients:

  • 3 ripe Hass avocados
  • 1 tomato
  • ½ onion
  • 3 jalapeño chiles
  • Cilantro to taste
  • 1 T. olive oil
  • ½ lime
  • Salt to taste
  • Tortilla chips

Directions:

  • Cut avocados open and discard pit. Scoop out flesh with a spoon and mash well
  • Add olive oil to help slow oxidation (browning)
  • Chop tomato, onion and chiles in small cubes and add some finely-chopped cilantro as well as a few drops of lime juice to this pico de gallo mixture
  • Stir well and blend into the avocado. Salt to taste and serve with tortilla chips
Sushi de aguacate con camarón

Avocado and shrimp sushi

(yields 4 rolls)

Filling Ingredients:

  • 1 avocado
  • 12 medium shrimp, peeled and deveined
  • 2 T. olive oil
  • 1 T. chipotle chile
  • Salt to taste
  • Pepper al gusto

Ingredients for assembling sushi:

  • 2 sheets of nori seaweed, cut in half
  • 2 cups of cooked sushi rice
  • 1 avocado
  • ¼ cup toasted sesame seeds

Directions - filling:

  • Mix oil and chipotle chile. Brush over shrimps, sprinkle with salt and pepper and sear them in hot oil for just 2 minutes.
  • Set aside; when cool enough, cut each in half.
  • Mash avocado in a bowl, salt and pepper to taste and set aside.

Directions - roll:

  • Place half a sheet of nori seaweed on a sushi rolling mat, spread with avocado mixture. Arrange a layer of rice over it, pressing lightly.
  • Fold mat and flip so seaweed is now on top.
  • PLACE shrimp down the center
  • Carefully roll with the help of the mat
  • Divide the second avocado in very thin slices, cover each roll and sprinkle with sesame seeds
  • Slice into 8 equal size rolls
Pay de aguacate

Avocado Pie

Ingredients:

  • 2 medium avocados
  • 1 pkg. cream cheese
  • 1 can sweetened condensed milk
  • ¼ cup lime or lemon juice
  • Pinch of salt

Directions:

  • Line a pie plate with waxed paper.
  • Add avocados, condensed milk and cream cheese to blender.
  • Toss in a pinch of salt and blend until smooth.
  • Add citrus juice and blend once more.
  • Pour mixture into center of prepared pie plate and spread evenly.
  • Refrigerate for 4 to 6 hours.
  • Unmold and place on a plate: garnish with fruit.
